Caprese Salad

This is one of the quickest and easiest salads I often make myself for lunch. Simple and packed full of flavour and really hits the spot! I add Avacado in for the Magnesium which helps Anxiety & Depression and also helps fight fatigue. I grow basil at home so it’s a good way to use it up before it gets unsightly.


Low Fat Mozzarella

Handful of Italian Plum tomatoes

6 large Fresh Basil Leaves

1/2 Ripe Avacado

Organic Olive Oil




Tear a third of the Mozzarella ball into to chunks and add to a bowl. Roughly chops the tomatoes and cube the avocado, bung them in. I then drizzle with oil and crack with salt & Pepper before finally tearing the basil by hand and adding to the salad!
